CHIAPAS, MEXICO | ESPRESSO ROAST
WHOLE BEAN
TASTING NOTES:
We found this gem from Chiapas and fell in love with it for our espresso. This coffee is roasted to exploit the big chocolate flavors when you pull a shot. The cup starts out with big gooey brownie notes, molasses, dates, malt, and carob, with a green apple finish.

LOT INFO -
We are super stoked to be carrying this coffee!
The Tzeltal are one of the main indigenous Mayan peoples of Mexico. Almost everyone in this highland part of Chiapas speaks Tzeltal as a first language, and they call themselves Winik atel, "Working Men." They run the area with their own customs and laws to keep their traditions strong.
Los Altos sits at 1,600 to 1,850 meters. Marble-rich soil covers the ground, and shady forests border the Lacandona jungle. The coffee grows among native trees, often organically by default.
Chiapas was one of the first places hit by coffee leaf rust in the 2010s, and one of the first to bounce back. Today it's leading the charge in rebuilding Mexico's coffee production. Mexican coffee is often like a candy bar in a cup, and this one lives up to that reputation.
